Pomegranate Mojito

The Pomegranate Mojito is a sweet and tangy variation of a classic Mojito cocktail made from white rum, pomegranate juice and simple syrup.
Thanks to the fresh mint muddled in lime juice, the cocktail is also very refreshing which balances its sweet and tart flavours.

Ingredients
- 6 mint leaves
- 70 ml pomegranate juice
- 60 ml white rum
- 30 ml simple syrup
- 15 ml lime juice
- soda water (to top up)
- 1 mint sprig
- 2 tbsp pomegranate seeds
Instructions
- Add mint leaves and and lime juice into an old-fashioned glass. Muddle the leaves to extract the juice.
- Add pomegranate juice, white rum and simple syrup. Stir well.
- Add pomegranate seeds, some ice cubes and top up with soda water. Stir gently to mix.
- Garnish with a mint sprig and serve immediately.
